This 2022 Yarra Valley Pinot Noir was produced using grapes sourced from the subregion of Gembrook in the Upper Yarra Valley.
Production is limited with less than 600 bottles produced.
Two thirds of the batch was hand destemmed and then foot stomped to extra juice and the finer tannin from the grape skins. The last third was kept as whole bunch and combined with the destemmed portion.
Throughout the primary fermentation the wine was gently hand plunged.
Primary fermentation was complete within 14 days, the open top fermentation vessel was then sealed to allow for further extended maceration of the wine with the total time on skins being 35 days.
9 months of barrel aging was carried out in seasoned barrels allowing the wine time to complete full malolactic fermentation.

This is a light style Pinot Noir with pronounced secondary savoury aromas and a darker fruit profile.
