Cabernet Franc: The wine you didn't know you needed
This 2022 Cabernet Franc was produced using grapes sourced from the Macedon Ranges
Production is limited with less than 1000 bottles produced.
The Winemaking: Hand picked and stomped with love
The parcel was split into three components; one third was sealed in a picking bin to undergo full carbonic maceration for 27 days after which it was destemmed and fermented until dry. The remaining two thirds were split in two; half was left as whole bunch and the other destemmed. Each portion was then combined to complete fermentation.
9 months of barrel ageing was carried out in seasoned barrels allowing the wine time to complete full malolactic fermentation.
